We’re stuck in isolation in Fiji, we have limited supplies and budget.  So, there has never been a better time to hone in on our fermentation skills! #Homebrew here we come! Why?  Because fermentation is cool...and not just because that’s where alcohol comes from. It’s an ancient technique used to preserve food. Fermented foods are loaded with probiotics and are good for our gut. Saves us money. It helps us be more self-sustainable. It creates less waste. We can make a lot from a little. Super-duper easy. We asked you last week for suggestions on our next video and the response was overwhelming, “we want those beer recipes”. We’ve been making ginger beer and Tepache (pineapple beer) here in Fiji because both ingredients are affordable and plentiful.  We’re sharing our Tepache recipe first because it's insanely simple and super tasty. I am sooo glad you requested this recipe and if you aren’t already a fermenting fiend, hopefully this will be your gateway experimentation. But, opinions are like birthdays; everyone has one and thinks theirs is important. When it comes to catamarans, many a sailor will scoff at the major production boats and label them as floating apartments or condomarans.  “Big, boxy things not meant for sailing.” I’ll admit that I have thought the same when looking out at raised flybridges with hulls twice the width of ours. But, once upon a time, our sailboat CURIOSITY was the “floating apartment” of her day.  Designed for comfort and space but with decent performance. Now, here we are, boarding the Leopard 45 which is the modern-day “floating apartment” version of our CURIOSITY.  It's way bigger and there have been more than a few design changes over the past fifteen years.  So the question that begs to be answered…can it sail and is it a better boat? We did all of that and so much more.  Some of it was gut-wrenching, some bittersweet and some of it was giving back to those who give to us unconditionally.  We even crossed over into another continent to see our saltiest of friends (South Africa…beyond incredible). And then there was this pandemic that started mucking up everything, for everyone.  WTF! Travel, banned.  Flights, grounded.  Borders, closed.  Quarantined.  Stranded.  In route back to our tiny floating home, we were stopped.  The world was shutting down and we weren’t allowed to make the final flight home.  It was canceled. Now here we are, in Fiji for the foreseeable future.  Self-isolating…waiting, pining for home. But, mother nature doesn’t bend to human pandemics, rules or lockdowns.  She rages on. There is a monster category 5 cyclone claiming lives in the Solomon Islands, ripping Vanuatu to shreds and heading straight for us.  Then, directly to Tonga…where, our home is parked. I feel we are being tested, tried, possibly pranked, in a very unfunny way.  Whatever the case, here is the story about that time we survived Cyclone Harold, while in isolation in Fiji during a pandemic. Friendships are one thing, but the bonds forged with friends on ships while crossing seas…well, those are on a whole other level.  And that is where our dear friend Kate comes in. We first met Kate and her husband Rufus in Panama. It was one of those fast forged, easy-going connections.  We snorkeled, shared sundowners and explored Panama together.  We even rang in the New Year together. Then, an opportunity came about.  Rufus and Kate were jumping ship.  They were leaving their current crew position to move up the ranks.  Kate was able to move on but Rufus still needed to finish training the new crew.  So, we invited Kate to sail from Panama to Ecuador with us while Rufus finished up the job. And well, the rest is history. It was three months of adventures, a lifetime of memories and one of the hardest “until next time” we’ve had to say.
